Cocoa mixes (syrups) (05.1.2.0)

Description

Products that may be produced by adding a bacterial amylase to cocoa liquor. The enzyme prevents the syrup from thickening or setting by solubilizing and dextrinizing cocoa starch. Includes products such as chocolate syrup used to prepare chocolate milk or hot chocolate.1 Chocolate syrup differs from fudge sauce (e.g. for ice cream sundaes), which is found in category 05.4.
