The Salvadoran Agency for Technical Regulation (OSARTEC) as Contact Point for the Codex Alimentarius in El Salvador has coordinated with the national academic sector to raise awareness about food safety. The efforts involved the development of multimedia content in celebration of World Food Safety Day, which highlighted the importance of food safety and its benefits at the national level.

More than fifty students from the following universities participated in this activity. All these students are pursuing food careers. They shared the following key World Food Safety Day messages:

  • University of El Salvador: Food safety has a direct impact on health
  • Catholic University of El Salvador: What was learned about food safety from the COVID-19 pandemic
  • Universidad Centroamericana “José Simeón Cañas”: Investing in food safety today will pay off in the future
  • Universidad Dr José Matías Delgado: Everyone is a risk manager
  • Evangelical University of El Salvador: If it is not safe, it is not food
  • Universidad Salvadoreña Alberto Masferrer: Food safety is based on science
  • Technological University of El Salvador: Strengthening collaboration improves food safety

Thanks to this collaboration between OSARTEC and the universities, seven World Food Safety Day videos were produced and disseminated to the public, private and academic sectors, as well as to the general public.

At the heart of the Codex mandate are the core values of collaboration, inclusiveness, consensus building and transparency. Governmental and non-governmental, public and private organizations alike play a vital role in ensuring Codex texts are of the highest quality and based on sound science.

Codex would have little authority in the field of international standard setting if it did not welcome and acknowledge the valuable contributions made by observers. Expert technical bodies, industry and consumer associations contribute to the standard-setting process in a spirit of openness, collaboration and transparency.

Intergovernmental organizations (IGOs) and international non-governmental organizations (NGOs) can apply for observer status in Codex in order to attend and put forward their views at every stage of the standard-setting process.

Codex and Observer

Food is a sensitive commodity, which has travelled
around the world since ancient times.
We might not always know where it comes from,
but we expect it to be available, safe and of good quality.
