The theme for this year is Food Safety, everyone’s business. A panel of experts drawn from industry and academia will each take time to present on different key issues and calls to action set out for the day by the WHO and FAO Some of the hot issues covered in talk include:

- Grow it safe - Agriculture and food producers need to adopt good practices
- Keep it safe - Business operators must make sure food is safe
- Eat it safe: All consumers have a right to safe, healthy and nutritious food

Mr Takudzwa Kufa
Mr Takudzwa Kufa (Taku) holds a MSc. Food Economics & Marketing from the University of Reading. Taku is a food technical professional with over 15 years’ food science technical skills & commercial experience in food manufacturing for global food brands, retail, wholesale & food service in the United Kingdom. Taku is passionate about food science & technology and his profound passion has made him a thought leader in the field of food safety. Taku has had the privilege to present at two global food safety conferences in 2017 namely: Food Sure Europe and Food Safety Trends Conference on the subject of managing food safety in a volatile, complex, uncertain and ambiguous world.
Taku sits on several boards as both non-executive director & executive director with experience in privately owned companies in the UK and Africa with focus on business growth and helping food companies to develop a growth mindset, gain international market context, develop innovation strategies, ethical trade compliance, international trade governance, international product compliance, networking, business continuity particularly during Covid-19 pandemic and advising the businesses to help them get ahead faster. Taku is a candidate Professional Doctorate in Agrifood – University of Nottingham. His talk on World Food Safety Day will bring insights on new food safety concepts from an international and African perspective.
Ms Thembi Blaai
Ms Thembi Blaaiis a Principal Environmental Health Practitioner at Nelson Mandela Bay Municipality. She holds a degree in Environmental Health and an Honors Degree in Sustainable Development. Thembi has worked as an Environmental Health Practitioner for over 14 years assessing different food industries.
Through her work, she has gained experience in conducting hygiene inspections to determine whether food is handled in a hygienic manner during production, transportation, storage, processing, distribution and at the point of sale; examining food labels; certification of businesses; ensuring that food businesses are implementing “good manufacturing practices”; examination, sampling and analysis of foodstuffs as well as conducting food safety training.
She is well versed in food-related legislations. Although part of her duties is to enforce food-related legislation to ensure compliance which can lead to prosecutions, the informal sector often offers great challenges which force her to take a developmental approach. She is a registered member of the Health Professional Council of South Africa.
Mrs. Kotsanayi Katsande
Mrs Kotsanayi Katsande holds a Master’s degree in Applied Sciences (Food Technology) from the University of New South Wales, Australia and a Bachelor of Technology degree (Applied Biology and Biochemistry) as well as a certificate in Executive Development Program and professional qualifications in Total Quality Management and Food Safety Management. She has over 20 years of work experience as a University Lecturer, Subject Matter Expert (Microbiology), Operational Microbiologist, Food Scientist, Medical Scientist (Bacteriology), Quality Manager and R&D Manager. Her work experience includes working for Queensland Health Scientific Services, Australia, Agricultural Research Council of South Africa (Onderstepoort Veterinary Research Institute), The Coca-Cola Company in South Africa, Government Analytical Laboratory, Pork & Dairy Processing private companies and Parirenyatwa Hospital Medical Laboratory.
She is currently the Director of FoodBev International Consulting responsible for Training and Talent Development. Kotsa has conducted over 100 training courses and trained more than 1000 people in the Food Industry and Testing Laboratories in many countries including Zambia, Mozambique, South Africa, Malawi, Mauritius, Ghana, Nigeria, Kenya, Uganda, Namibia, Botswana, Zimbabwe, Swaziland (Eswatini) and Ethiopia.

At the heart of the Codex mandate are the core values of collaboration, inclusiveness, consensus building and transparency. Governmental and non-governmental, public and private organizations alike play a vital role in ensuring Codex texts are of the highest quality and based on sound science.
Codex would have little authority in the field of international standard setting if it did not welcome and acknowledge the valuable contributions made by observers. Expert technical bodies, industry and consumer associations
contribute to the standard-setting process in a spirit of openness, collaboration and transparency.
Intergovernmental organizations (IGOs) and international non-governmental organizations (NGOs) can apply for observer status in Codex in order to attend and put forward their views at every stage of the standard-setting process.
